Hollandaise sauce is one of the five sauces in the French haute cuisine mother sauce repertoire. It is an emulsion of lemon juice and butter, by way of egg yolk. In appearance, it is light yellow and opaque, smooth and creamy.
Historians believe that it was actually invented in the Netherlands and then taken back to France by the Huguenots in the 1500's.
