Brownie was invented by a chef at the historic and famous Palmer House Hotel in Chicago (built in 1875). The owner's wife requested a dessert for ladies attending a fair. She wanted something smaller than a slice of cake, but still cake-like, and could easily be eaten from lunch boxes. The earliest published recipes for a brownie appeared in 1904.
